As part of the "GMS314 - World Cuisine" course conducted for junior (3rd-year) students, an applied workshop titled "Professional Techniques in Chinese Sauces" was held at the Department of Gastronomy and Culinary Arts, Istanbul Gelisim University. The event, held with the participation of Koza Gıda Demo Chef Atilla Arağ, was met with great enthusiasm by the students.
The workshop focused on the correct use of essential Chinese culinary components, such as soy sauce, oyster sauce, and hoisin sauce, within professional kitchens. During the session, details on how to balance these sauces in dishes, their compatibility with various ingredients, and their roles in creating depth of flavor were conveyed extensively.
Throughout the hands-on training process, students gained comprehensive knowledge of marination techniques and had the opportunity to experience firsthand how to integrate these sauces with different protein and vegetable groups. By presenting both traditional Chinese culinary practices and modern gastronomic approaches, the workshop aimed to help students develop diverse perspectives.
Chef Atilla Arağ shared his industry experience with the students, touching upon the nuances of sauce usage in professional kitchens. Additionally, critical information regarding speed, organization, and flavor standardization in the kitchen was provided. Students took an active role during the application, participating in every stage of the food preparation.
In the later stages of the event, students conducted tastings of the prepared dishes to analyze the impact of the sauces on the overall meal. The event continued with a Q&A session, allowing participants to gain direct insights into their topics of interest. The workshop contributed to the students' development both theoretically and practically. At the end of the program, students noted that the knowledge gained would be a significant asset to their professional growth, and the event concluded with a commemorative photo session with Atilla Arağ.
