 New Paper Presentation by Murat Doğan!


Assoc. Prof. Dr. Murat Doğan, Vice Dean of Istanbul Gelisim University (IGU), Faculty of Fine Arts (FAF) and Department of Gastronomy and Culinary Arts, made a new oral presentation.

Assoc. Prof. Dr. Murat Doğan participated in the congress titled “Artificial Intelligence and Social Sciences” organized by Ufuk University for the second time this year. The congress was held online on 3-4-5 May. Assoc. Prof. Dr. Murat made an oral presentation titled “The Use and Future of Artificial Intelligence in Kitchens” at the congress. The information about Doğan's statement, which made his presentation on Friday, May 5, is given below.

From the abstract of the paper: “Smart kitchens, which contain all the features of artificial intelligence, which is one of the most important elements of smart technologies, will be one of the most important concepts and phenomena of today and the future. Today, there is an increasing reliance on innovative technologies designed to make our lives easier. Currently, smart technologies are used in some kitchens in the food and beverage industry. Ovens, stoves, refrigerators, dishwashers, and other appliances fall into this category. With a Wi-Fi connection, it can be controlled via computers and smartphones wherever you are. In the future, according to the innovative approach brought by Industry 4.0, it is planned to use machine power instead of human power and artificial intelligence based on smart technologies. For the formation of smart kitchens of the future, Industry 4.0's (1) internet of things, (2) simulation, (3) big data and analytics, (4) autonomous robots, (5) horizontal and vertical system integration, (6) additive manufacturing, (7) augmented reality, (8) cloud computing, and (9) cyber security elements continue to support and develop artificial intelligence. Artificial intelligence is predicted to be the most important component of the kitchen of the future. In the kitchens of the future, artificial intelligence supported by specific software will pave the way for robotic systems to operate autonomously. By adding artificial intelligence to the devices in the kitchens, communication between devices will be ensured, and these robotic systems will minimize the need for humans. Today, artificial intelligence has begun to be used in the food and beverage industry, albeit a little. Thanks to artificial intelligence software, we can intervene by seeing the temperature rise in the cold storage rooms in the kitchens on our smartphones. New ovens with artificial intelligence, supported by smart software, decide on their own how many degrees and how long the food will be cooked. The examples given are signs that artificial intelligence will dominate kitchens in the future. As a result, it is estimated that the artificial intelligence supported by Industry 4.0 will radically change the menus and taste perception as well as the kitchens of the future.”
