A New Article by Assoc. Prof. Murat Doğan Has Been Published!
A new article by Assoc. Prof. Murat Doğan, one of the Vice Dean of Istanbul Gelisim University (IGU), Faculty of Fine Arts (FFA) and Gastronomy and Culinary Arts Department Academicians, has been published.
Assoc. Prof. Murat Doğan’s article titled “Effect of street food vendors’ food safety knowledge, attitudes, and practices on the microbiological quality of street foods” has been published. The article was published in the International Journal of Gastronomy and Food Science. In the study, which is published in English, Doğan and Ay aimed to evaluate the food safety knowledge, attitudes, and practices of street food vendors in touristic areas of Istanbul.
Murat Doğan made the following statements about the article:
“The incidence of foodborne diseases is increasing due to the increasing habit of eating out, including street food. This study aims to evaluate the food safety knowledge, attitudes and practices of street food vendors, especially in touristic areas of Istanbul, regarding the microbiological quality of street food through surveys, on-site observations and traditional microbial assessment. The survey data were statistically analyzed with multiple regression tests (p<.05). The results showed that the food safety knowledge of street food vendors was inadequate with a score of 2.67 ± 0.71 (53.4 out of 100), their attitudes were inadequate with a score of 2.56 ± 1.09 (51.2 out of 100) and their practices were inadequate with a score of 2.35 ± 1.54 (47.0 out of 100). In addition, other variables except food safety knowledge were significantly and linearly related to microbiological quality (p <.05). In general, the poor food safety knowledge, attitudes and practices of street food vendors and the food they produce pose a food safety risk to consumers. Therefore, legal authorities should increase the inspection and regular control frequency of street food and vendors and implement well-organized food safety training programs.”
