 Assoc. Prof. Dr. Murat Doğan’s New Article Published!


A new article by Assoc. Prof. Dr. Murat Doğan, one of the Dean’s Assistants of Istanbul Gelişim University (IGU), Faculty of Fine Arts (FFA) and a member of the Gastronomy and Culinary Arts Department, has been published.


Assoc. Prof. Dr. Murat Doğan’s article titled “A New Concept in Gastronomy: Cinegastronomy” has been published. The article was published in the Journal of Tourism and Gastronomy Studies, which is in the publishing process in the fields of gastronomy and tourism. With his English study, Doğan aimed to define the concept of “cinegastronomy”, a new concept in gastronomy, in detail.

Assoc. Prof. Dr. Murat Doğan made the following statements about the article:

“In this study, we aimed to define the theoretical and conceptual framework of cinegastronomy, a new concept that we are trying to introduce in the field of gastronomy. To achieve this, we conducted an electronic brainstorming session with 55 cinema experts using the AnswerGarden® program. We analyzed the collected data using content analysis to create themes and used the nominal prioritization technique to rank these themes according to their priority. As a result, we divided the concept of cinegastronomy into three main themes and twelve subthemes: (1) gastronomic symbols, (2) the meeting of cinema and gastronomy, and (3) the reflection of people and food in cinema. The twelve subthemes are ranked in order of importance, and the first three are as follows: (1) a narrative and representational tool in film; (2) innovative and engaging; and (3) the combined use of gastronomy and signs in cinema. In general, we define cinegastronomy as the expression of gastronomic perceptions and, beyond that, realistic or metaphorical signs through cinematographic techniques.”
