The book chapter was co-authored by Istanbul Gelişim University (IGU), Gastronomy Department Coordinator Assoc. Prof. Dr. Serdar Egeli, and Faculty of Fine Arts (FFA), Gastronomy and Culinary Arts Department Res. Asst. Emel Çirişoğlu has been published.
The first edition of the book "Turkey's Street Foods", edited by Özgür Kızıldemir, was published and took its place on the shelves. There are a total of seventeen authors in the book published in November. In this book, which consists of 12 chapters in total, street delicacies, and their historical development are discussed, and these delicacies are examined in terms of gastronomy tourism. The book includes the "Beverages" section, jointly written by the Gastronomy Department's Coordinator Assoc. Prof. Dr. Serdar Egeli and Gastronomy and Culinary Arts Department Res. Asst. Emel Çirişoğlu.
In the co-written section, Egeli and Çirişoğlu touched upon the history of Street Drinks and explained the place, culture, and tradition of drinks among street delicacies from past to present. Among these drinks, sherbets, pickle juice, boza, must, Turkish coffee, tea, freshly squeezed fruit juice, and lemonade are explained in detail.
Egeli and Çirişoğlu stated that street delicacies are an important component of gastronomy tourism and contain elements that add diversity to the destination. In addition, it attracts a lot of attention from tourists as it reflects the local culture of the region as it is. Ensuring the sustainability of the street flavors of cuisine such as Turkish cuisine, which has a very rich product variety, is important in terms of transferring the culture to future generations and contributing to gastronomy tourism.
As a result, there is not enough data on culinary culture on the websites of the Ministry of Culture and Tourism, which has an important role in promotion, and there is a need to share more information to expand the promotion in this direction.
