Assoc. Prof. Dr. Murat Doğan, Associate Dean of Istanbul Gelişim University (IGU), Faculty of Fine Arts (FAF), and Head of Department of Gastronomy and Culinary Arts, made another oral presentation at the conference.
Assoc. Prof. Dr. Murat Doğan participated in the “National Coffee Symposium” organized by Toros University, a first in its field. The symposium was held online on February 3, 2023. At the symposium he attended, Assoc. Prof. Dr. Murat Doğan orally presented the paper titled “The Evaluation of Coffee in Terms of Turkish Gastronomy History and Culture”. Information about Assoc. Talking about the origin of the coffee plant first, Doğan then gave information about traditional production methods. Emphasizing that the study aims to determine the effect and importance of coffee on the history and culture of Turkish gastronomy, Assoc. Prof. Dr. Murat Doğan added that he used literature review and content analysis methods from qualitative research methods in the study. Stating that Turkish coffee has an important place in Turkish history and culture as it has the oldest preparation and cooking method that has survived from the Ottoman Empire, Doğan said: “Turkish coffee has become an element of the ancient tradition in terms of gastronomy history and culture and started to be served in coffeehouses in Istanbul in the 16th century.”. Doğan stated that Turkish coffee brings together social values and beliefs in every segment of society from the past to the present and contributes to socialization, adding that it has an impact on the formation and development of Turkish gastronomy history and culture in terms of social and originality.
